Quick & Easy Vegan Ramen

This Vegan Ramen is a delicious, belly warming homemade soup that is more than ideal for a cold or rainy day. It’s made out of ramen noodles & tofu & green onion and comes together in less than half an hour!

If you’re just at home, feeling lazy, and craving something that tastes like a Ramen bowl, looks like a Ramen bowl, and warms your belly like a Ramen bowl, there’s no need to panic. You can get it done with minimal ingredients that you probably already have lyin’ around in your kitchen.

Quick & Easy Vegan Ramen

Cook Time 20 minutes
Total Time 30 minutes


  • 2 tbsp avocado oil
  • 1 large onion
  • chilly (if you like spicy food)
  • 4 garlic cloves
  • 3-inch cube of ginger
  • dried shiitake mushrooms
  • 1l vegetable broth
  • 2 tbsp vegan fish sauce
  • 2 tbsp soy sauce
  • 1 tbsp miso
  • 1 tbsp of sugar (or agave)
  • 1 block soft tofu
  • vegan ramen
  • green onions/chives to garnish


    1. Heat the olive oil on medium-high heat.
    2. Add the onion & chilly and saute for around 3 minutes.
    3. Add garlic and ginger to the pot.
    4. Next, add the dried shitake mushrooms and saute for another 2 minutes.
    5. Add the vegetable broth, vegan fish sauce, soy sauce, miso paste, sugar and bring to a boil, mixing well until everything is combined, then reduce heat to low, cover & let simmer for 10 minutes.
    6. Raise the heat to medium, add the tofu and ramen noodles - cook until the noodles are soft.
    7. Garnish with onion, chives & sesame seeds.
    8. Enjoy your soup!
