Stuffed Mushrooms

I have always been a fan of mushrooms, so I decided that I wanted to share one of my favourite recipes with you. This can be served as an appetiser & it’s a perfect party meal! Quick and easy to make. What else could you want?

You can choose whatever mushrooms you like the most or you can even put a variety of different mushroom caps on your tray. Don’t be afraid to experiment.

They contain ergothioneine wbich is the greatest mushroom health benefit for increasing energy and slowing down the ageing process. They also contain beta-glucan that boosts immune system and has anti-cancer and anti-tumor inhibiting properties. There are also full with vitamin D that creates strong bones and teeth, helps with depression and even with weight loss. 

Stuffed Mushrooms

Prep Time 20 minutes
Cook Time 20 minutes
Total Time 40 minutes


  • 200g mushrooms
  • 1 onion
  • 2 cloves of garlic
  • 5 medium pickles
  • 2 tbsp soy yoghurt
  • salt, pepper & rosemary to taste


    1. Wash the mushrooms and carefully remove the stems.
    2. Place them on a baking dish and season with salt & pepper.
    3. Dice the stems. Chop an onion.
    4. Dice the pickles, really small.
    5. Heat the olive oil & add the onion. As the onion turns yellowish add the mushroom stems & garlic. Cook for about 5 minutes & remove from the heat.
    6. In a bowl combine mushroom stems, pickles, soy yoghurt, rosemary & season with salt and pepper.
    7. Add about one spoon to fill the mushrooms. Top with vegan parmesan cheese.
    8. Bake for 20 minutes at 200C
    9. Serve & Enjoy
